1 LARGE CHICKEN 2 GRANNY SMITH APPLES(cut into fours) 4 TBS THYME 1/4 T SALT 1/4 t PEPPER 1/8 t ALLSPICE 1 LARGE ONION(cut into fours) 1/4 C WATER 2 t OLIVE OIL 2 T IMITATION BRANDY 1/2 C chicken broth(FROM THE CHICKEN ITSELF IS BEST!) 1)Preheat oven to 350. 2)Remove insides of chicken and rinse chicken inside and out with cold running water then remove skin from the chicken. 3)Sprinkle thyme, allspice, salt and pepper all over the chicken. 4) Add apples. Roast in the oven for 40 minutes. 5) In roasting pan, combine onion, thyme, water, and oil for 20 minutes top of oven. 6)Push the onion mixture to the sides and add the chicken with the apples to the onion mixture.
