I'M MAKING THIS AND A PECAN PIE FOR THANKSGIVING!!

HELLO COUNTRY BUMPKIN' LASAGNA




2 TBS EXTRA VIRGIN OLIVE OIL

1 1/2 LBS BULK SWEET ITALIAN SAUSAGE(TURKEY IS BETTER FOR YOU HEALTHWISE, BUT USE WHAT U LIKE!!)

1 LARGE EGGPLANT(peeled and finely chopped)

1 MEDIUM ONION(chopped)

2 GARLIC CLOVES(GRATED)

A LITTLE SALT, BUTS LOTS OF PEPPER!!

3 TBS BUTTER

3 TBS FLOUR

3 CUPS MILK

1 15 OZ. CAN OF LIBBY'S PUMPKIN PUREE(NOT PUMPKIN PIE FILLING--BE CAREFUL!!)

3 SHAKES OF NUTMEG

1 BOX OF OVEN READY LASAGNA NOODLES

1 1/4 C GRATED PARMIGIANO REGGIANO CHEESE



1)Preheat oven to 375 degrees. 2)Heat a large skillet (med. high heat w/ 2 TBS OLIVE OIL) 3)Take off casing of sausage then add it to the pan and cook untill golden brown. Breaking up the meat as you go w/ a wooden spoon or rubber spatula. 4)Push the meat to one side then add the eggplant, onion, and the garlic. Cook that about 5 to 6 minutes until the vegetables are soft and tender. Season w/ salt and pepper.



5)As the vegetables are cooking, place a med. size saucepan on med-high heat and melt the butter then add in the flour. Cook the mixture for a minute to cook it out of a paste feel. Break up the lumps and bring the mixture to a bubble and add the pumpkin puree and nutmeg. Add a little sea salt and more pepper!! Let it get thick somewhat.



6)Spread the mixture (about a cup) into the baking dish(13" X 9" pan) Then layer the the noodles More meat then add the cheese. Continue this untill you fill the dish. Make sure to put the last of the cheese on top when you are done layering in your casserole dish. 7)Cover w/aluminum foil. Coook for 45 minutes.- That's untill the last 10 minutes to brown the cheese on top!! Let it rest a few minutes before serving!! IT'S GOOD!!HTTP://SWEETPEA-HONEYBUN.BLOGSPOT.COM

MONDAY'S SOAP OPERA PARTIES' RECIPES

MAKES 4 SERVINGS


1 pound lean ground turkey

1-1/2 cups coarsely shredded German Emmentaler cheese, divided

1 cup sauerkraut, squeezed dry

1/4 cup plain bread crumbs

1 egg white

2 tablespoons medium-hot mustard, plus extra for spreading on buns

1/2 teaspoon caraway seeds (optional)

1/4 teaspoon salt

1/4 teaspoon freshly ground pepper

4 pretzel rolls or other sandwich rolls, split horizontally and toasted

Accompaniments: pickles, red onion rings, sliced tomatoes, lettuce leaves

Combine turkey, 1 cup Emmentaler cheese, sauerkraut, bread crumbs, egg white, mustard, caraway seeds (if desired), salt and pepper in a large bowl; mix together. Shape into 4 (4-inch diameter) patties.

Heat a large non-stick skillet over medium heat. Place burgers in skillet and cook, turning once, 4 to 5 minutes on each side or until cooked through. Sprinkle burgers evenly with remaining 1/2 cup shredded cheese during the last 2 minutes of cooking.

Spread rolls with additional German mustard. Place burgers on buns, and top with pickles, onions, tomatoes and lettuce.

Nutrition facts per serving: 460 calories, 14 g fat, 4 g saturated fat, 137 mg cholesterol, 39 g carbohydrates, 44 g protein, 979 mg sodium, 2 g fiber

MAKE THIS ON THOSE HOT SOUTHERN USA DAYS!! OREO DELIGHT--(got the recipe from a Angela, my friend from school)but she takes just the pudding mix and does it! 1 PKG OREO COOKIES 1 CONTAINER OF COOL WHIP 2 PKG VANILLA PUDDING(1 powdered and 1 jello pudding snack pack) 3 PKGS CREAM CHEESE a little vanilla(my addition) 1)Crush half OREO cookies set aside. 2)Open cool whipped cream and cream cheese and mix with the crushed cookies. 3)Put in a glass casserole dish--layering whole cookies between the mix. If not going to eat right away--Keep in the refrigerator! It's delightful!! IT'S LATE I KNOW!! SP-HB

EARLY-- MONDAY'S SOAP PARTY RECIPE

ADIRONDACK RED WING BURGERS 4 Servings Ingredients: 2 tablespoons extra-virgin olive oil (EVOO) 1 carrot, finely chopped 1 rib celery with leafy tops, finely chopped 1/4 cup finely chopped onion 2 cloves garlic, finely chopped 1 1/2 pounds ground turkey or chicken 2 tablespoons finely chopped fresh dill 1 teaspoon poultry seasoning Salt and pepper 2 tablespoons butter 1/4 cup hot pepper sauce 1/2 cup blue cheese crumbles 4 sandwich-size english muffins, toasted 4 deli slices cheddar cheese 1/4 head iceberg lettuce, shredded 1/4 cup pickle relish Directions: In a small skillet, heat 1 tablespoon EVOO, 1 turn of the pan, over medium heat. Add the carrot, celery, onion and garlic and cook until tender, about 5 minutes. Transfer to a bowl and let cool. Reserve the skillet. Mix the turkey, dill and poultry seasoning into the vegetable mixture; season with salt and pepper. Form into 4 patties. In the reserved skillet, heat the remaining 1 tablespoon EVOO over medium heat. Add the patties and cook, turning once, until firm, about 12 minutes; transfer to a plate. Add the butter to the skillet to melt, then stir in the hot sauce. Add the patties to the sauce, turning to coat. Top each with some of the blue cheese and a cheddar slice. Tent with foil, turn off the heat and let stand until the cheese is melted. Top each muffin bottom with some lettuce, a patty, some relish and a muffin top. Here's a DESPERATE HOUSEWIVES' man recipe

from JAMES DENTON AND GOOD HOUSEKEEPING CHEESE SOUFFLE` 2 CUPS WATER 1/2 CUPSQUIC-COOKING GRITS 4 TBS. BUTTER 3/4 CUPS SHREDDED HORSERADISH- OR SHARP CHEDDAR CHEESE 1/4 tsp. SALT 2 LARGE EGGS 1/3 CUP LOW-FAT ((1%)) MILK 1/4 CUP FRESHLY GRATED PARMENSAN CHEESE PINCH OF PAPRIKA((THAT'S OPITIONAL!!)) PREHEAT OVEN TO 350 DEGREES. GREASE 8"X8" ((2 QT)) GLASS OR CERAMIC PAN OR DISH OR YOU CAN USE 6 6 OZ RAMEKINS. IN A 2-QT SAUCEPAN, HEAT WATER TO BOILING ON MED-HIGH HEAT. THEN, REDUCE HEAT TO LOW. WITH A WIRE WHISK, GRADUALLY STIR IN GRITS. CONTINUE WHISKING TO GET RID OF LUMPS. COVER AND COOK 10-15 MINUTES. UNTIL WATER IS GONE AND THE GRITS ARE CREAMY. THEN TRANSFER TO A LARGE MIXING BOWL. sTIR IN BUTTER, CHEDDAR, AND THE 1/4 TSP SALT UNTIL IT'S COMBINED. IN A SEPARATE SMALL BOWL, WHISK EGGS AND MILK TIL WELL COMBINED. THEN WHISK THIS INTO GRITS. POUR MIXTURE INTO PREPARED PAN OR RAMEKINS. SPRINKLE WIHTTHE CHEESE AND THE PAPRIKA IF U LIKE THAT. BAKE UNCOVERED--45--60 MINUTES. TOP SHOULD GET GOLDEN. http://sweetpea-honeybun.blogspot.com
